Nutty, chewy tahini cookies loaded with dark chocolate chunks and topped with flaky sea salt. A one-bowl wonder.

Preheat the oven to 180 C (fan 160 C). Line two baking sheets with parchment. In a large bowl, stir together the tahini and brown sugar until smooth. Beat in the egg and vanilla. Add the bicarbonate of soda and fine salt, mixing until just combined. Fold in the chocolate chunks.
Using a tablespoon or small ice cream scoop, portion the dough into 16 balls (about 35 g each). Place on the lined sheets, spacing 5 cm apart. If the dough feels soft, refrigerate the scooped balls for 15 minutes to firm up.
Bake for 10-12 minutes until the edges are set and lightly golden but the centres still look slightly underdone. They will firm up as they cool. Immediately press a few extra chocolate chunks into the tops if desired.
While still warm, sprinkle each cookie with a pinch of flaky Maldon salt. Let cool on the baking sheet for 10 minutes before transferring to a wire rack. Store in an airtight container for up to 4 days.
