Preheat the oven to 170 C (fan 150 C). Line a large baking sheet with parchment. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
In a small bowl, whisk together the eggs, vanilla, orange zest, and orange juice. Pour into the dry ingredients and stir with a wooden spoon until a sticky dough forms. Fold in the pistachios and cranberries (if using).
Divide the dough in half. With lightly floured hands, shape each half into a flat log about 25 cm long and 8 cm wide directly on the baking sheet. Leave space between them as they spread. Bake for 25 minutes until firm and lightly golden. Remove and let cool for 10 minutes. Reduce oven to 150 C (fan 130 C).
Using a serrated knife, cut each log diagonally into 1.5 cm slices. Lay the slices cut-side down on the baking sheet. Bake for 10 minutes, flip each biscotti, and bake another 10 minutes until dry and golden on both sides.
Transfer to a wire rack and cool completely. They will crisp up as they cool. Store in an airtight tin for up to 2 weeks.
